When the weather starts getting chilly, I am all about some hearty soups. If you aren’t a soup-loving mama, hear me out. There are so many awesome things about soup and some of the recipes I am going to share will not disappoint. I have some easy and delicious soup recipes that are guaranteed to keep you warm and toasty this winter.
Soups in my recipe book are typically easy to prepare! Anything that I can prep in under an hour in a single pot is always on my favorites list. On the days when I am prepping more than one meal, many can be prepared in the Crockpot. I haven’t gotten on the InstaPot bandwagon yet, but I am sure that works even better. I love being able to put everything into one pot and enjoying a healthy meal. One of my favorites is this delicious black bean soup.
Freeze for easy lunch or dinner
I am definitely not that “meal prep” kinda mom, but kudos to you moms who cook everything on Sunday. Even though that’s not typically how I cook, I don’t mind making a double batch and freezing some for an easy meal later on. Soups are easy to portion out and we use Ziploc freezer bags to make it easy and leave lots of space in the freezer.
Great for Kids (sample flavors)
I know what you are thinking. Soups aren’t necessarily a “kid friendly” food. However, soups are an opportunity for kids to sample different flavors! Think of it as a sophisticated puree which allows your child to get some veggies that may be less appealing in their original form. Even a spoonful can help to introduce a new flavor.
Easy to Modify (and inexpensive)
So many soups I’ve made do not require expensive ingredients. That’s a real bonus in our home. If you are looking for modifications for vegan or vegetarian diets, you will find that lots of soups require only fresh produce and beans or rice. Most of these ingredients are inexpensive and easy to find at your local supermarket. Soups are also easily modified to fit virtually any diet. Since we are mostly dairy free, our creamier soups can be made without dairy ingredients, exchanging heavy creams and cheeses for coconut milk and cream. Any chicken or beef broth can also be replaced with vegetable broth for a vegetarian option.
